INGREDIENTS

For 2 servings

FOR THE PANCAKES

100 g rolled oats, finely blended
1 ripe banana — about 100 g
2 large eggs
100 ml unsweetened almond milk
1 tsp baking powder
½ tsp vanilla extract
½ tsp ground cinnamon
5 ml extra virgin olive oil, for cooking

TO SERVE

100 g plain Greek yogurt
120 g mixed berries — strawberries, raspberries & blueberries
10 g almond butter
10 g honey or maple syrup

METHOD

1. Make the batter
Blend the rolled oats until fine. Add the banana, eggs, almond milk, baking powder, vanilla and cinnamon, then blend until smooth.

2. Heat the pan
Heat a non-stick frying pan over medium heat and lightly brush with the olive oil.

3. Cook the pancakes
Pour small portions of batter into the pan. Cook for 2–3 minutes until bubbles appear and the edges begin to set, then flip and cook for another 1–2 minutes.

4. Build the stacks
Divide the pancakes between two plates and layer with spoonfuls of Greek yogurt and fresh berries.

5. Finish & serve
Drizzle with almond butter and honey or maple syrup, then add the remaining berries on top. Serve warm.
