INGREDIENTS

For 2 servings

FOR THE OATS

50 g rolled oats
200 ml unsweetened almond milk
50 ml water
½ tsp ground cinnamon
½ tsp vanilla extract
Pinch of salt

FOR THE WARM APPLE

1 small apple — about 120 g, diced
½ tsp ground cinnamon
1 tsp honey or maple syrup — about 7 g
1 tbsp water

TO FINISH

15 g almond butter
5 g chopped almonds

METHOD

1. Cook the oats
Add the rolled oats, almond milk, water, cinnamon, vanilla and a pinch of salt to a small saucepan. Cook over medium-low heat for 5–7 minutes, stirring regularly, until creamy.

2. Prepare the warm apple
Add the diced apple, cinnamon and water to a small pan. Cook for 4–5 minutes until the apple begins to soften.

3. Add a little sweetness
Stir the honey or maple syrup into the warm apple and cook for another minute until lightly caramelised.

4. Build the bowl
Spoon the creamy oats into a bowl and top with the warm cinnamon apple.

5. Finish & serve
Add the almond butter and chopped almonds. Serve immediately while warm and creamy.
