INGREDIENTS

For 2 servings

FOR THE CAKE

250 g ripe banana, mashed
120 g rolled oats, finely blended
80 g ground almonds
2 large eggs
100 g plain Greek yogurt
40 g honey or maple syrup
30 ml extra virgin olive oil
1 tsp vanilla extract
1 tsp baking powder
½ tsp ground cinnamon
Pinch of salt

TO FINISH

20 g flaked almonds
½ small banana, sliced

METHOD

1. Prepare the oven
Preheat the oven to 180°C. Line a small loaf tin with baking paper.

2. Mix the wet ingredients
In a large bowl, mash the banana until smooth. Add the eggs, Greek yogurt, honey or maple syrup, olive oil and vanilla. Whisk until well combined.

3. Add the dry ingredients
Add the blended oats, ground almonds, baking powder, cinnamon and salt. Stir gently until just combined.

4. Fill the tin
Pour the mixture into the prepared loaf tin and smooth the top. Arrange the banana slices over the surface and sprinkle with the flaked almonds.

5. Bake
Bake for 30–35 minutes, until golden and a skewer inserted into the centre comes out clean.

6. Cool & slice
Leave the cake to cool in the tin for 10 minutes, then transfer to a rack. Allow to cool before cutting into 8 slices.
