INGREDIENTS

For 2 servings

FOR THE BITES

120 g rolled oats
100 g fresh raspberries
80 g natural peanut butter
60 g dark chocolate (70% cocoa), roughly chopped
50 g pitted dates, finely chopped
30 g honey or maple syrup
20 g ground almonds
1 tsp vanilla extract
Pinch of salt

METHOD

1. Prepare the mixture
Preheat the oven to 180°C. In a large bowl, combine the rolled oats, ground almonds and salt.

2. Add the wet ingredients
Add the peanut butter, honey or maple syrup and vanilla extract. Mix until everything is evenly combined.

3. Add the chocolate & raspberries
Fold in the chopped dates and dark chocolate. Gently add the raspberries last, keeping some pieces intact.

4. Shape the bites
Divide the mixture into 10 portions and gently shape into compact bites. Place them on a baking tray lined with baking paper.

5. Bake
Bake for 12–15 minutes, until lightly golden around the edges. They should remain slightly soft in the centre.

6. Cool & enjoy
Leave to cool on the tray for a few minutes before transferring to a rack. Allow them to cool completely so they firm up naturally.
