INGREDIENTS

For 2 servings

FOR THE YOGURT BARK

400 g Greek yogurt
100 g strawberries, sliced
80 g raspberries
60 g blueberries
30 g flaked almonds
20 g pistachios, roughly chopped
20 g honey or maple syrup
1 tsp vanilla extract

METHOD

1. Prepare the yogurt mixture
In a bowl, mix the Greek yogurt with the honey or maple syrup and vanilla extract until smooth and creamy.

2. Spread the yogurt
Line a baking tray or flat dish with baking paper. Spread the yogurt mixture into an even layer, about 1 cm thick.

3. Add the toppings
Arrange the strawberries, raspberries and blueberries over the yogurt. Sprinkle with the flaked almonds and chopped pistachios, gently pressing the toppings into the yogurt.

4. Freeze
Place in the freezer for at least 3 hours, or until completely firm.

5. Break into pieces
Remove from the freezer and break or cut the frozen yogurt bark into 8 irregular pieces.

6. Serve
Enjoy straight from the freezer, allowing it to soften for 1–2 minutes before eating for a creamier texture.
