INGREDIENTS

For 2 servings

FOR THE BOWL

120 g quinoa, uncooked
240 g chicken breast
1 small avocado
120 g cherry tomatoes
100 g cucumber
80 g carrot
60 g mixed leafy greens
30 g feta cheese
10 g pumpkin seeds
1 tbsp extra virgin olive oil
Fresh parsley or coriander
Salt & freshly ground black pepper

LEMON-TAHINI DRESSING

30 g tahini
1 tbsp fresh lemon juice
1 tsp honey
1 small garlic clove, finely grated
1–2 tbsp water
Pinch of salt

METHOD

1. Cook the quinoa
Rinse the quinoa thoroughly. Cook according to the packet instructions until tender, then fluff with a fork and leave to cool slightly.

2. Cook the chicken
Season the chicken with salt and black pepper. Heat the olive oil in a pan over medium-high heat and cook the chicken for around 5–6 minutes per side, or until fully cooked. Rest for a few minutes, then slice.

3. Prepare the vegetables
Halve the cherry tomatoes, dice the cucumber, grate the carrot and slice the avocado. Wash and dry the leafy greens.

4. Make the dressing
Whisk together the tahini, lemon juice, honey, garlic and salt. Gradually add water until smooth and creamy.

5. Build your bowl
Divide the quinoa and greens between two bowls. Add the chicken, avocado, tomatoes, cucumber and carrot. Sprinkle with feta, pumpkin seeds and fresh herbs.

6. Finish & serve
Drizzle with the lemon-tahini dressing and serve immediately.
