INGREDIENTS

For 2 servings

FOR THE PASTA

160 g wholewheat pasta, uncooked
250 g chestnut mushrooms, sliced
100 g baby spinach
80 g onion, finely chopped
2 garlic cloves — about 8 g
10 ml extra virgin olive oil
100 ml light cooking cream
30 g Parmesan, finely grated
100 ml low-salt vegetable stock
1 tsp Dijon mustard
1 tsp fresh lemon juice
Freshly ground black pepper
Pinch of nutmeg
Salt, if needed

TO FINISH

10 g Parmesan, finely grated
Fresh parsley
Freshly ground black pepper

METHOD

1. Cook the pasta
Bring a large pan of water to the boil and cook the wholewheat pasta according to the packet instructions until al dente. Reserve a little pasta water before draining.

2. Cook the mushrooms
Heat the olive oil in a large pan over medium-high heat. Add the mushrooms and cook for 5–6 minutes until golden. Add the onion and garlic, then cook for another 2–3 minutes until softened.

3. Make the creamy sauce
Lower the heat and add the vegetable stock, light cooking cream, Dijon mustard, nutmeg and black pepper. Stir gently and simmer for 2–3 minutes.

4. Add the spinach
Add the baby spinach and stir until just wilted. Mix in 30 g Parmesan and the lemon juice until the sauce is smooth and creamy.

5. Combine
Add the drained pasta to the pan and toss until evenly coated. If needed, add a splash of the reserved pasta water to loosen the sauce.

6. Finish & serve
Divide between two bowls. Finish with the remaining Parmesan, fresh parsley and freshly ground black pepper.
